Hello my darlings,

This is my favorite recipe to celebrate Ostara or Easter. I’ve been making it for years, although the frosting will change depending on how I feel that year. This was my first year making chamomile frosting and I think it might be my favorite, might actually stick as a tradition now. I love this recipe because it is so healthy, I don’t feel any guilt for going back for seconds! The frosting is VEGAN or Dairy Free, made with whole foods so you can eat and heal your body. 

Chamomile + Lemon Bread

Chamomile is excellent for the skin and for the body too. Chamomile is known for its sedative qualities. Most often people will drink a soothing cup of chamomile tea before bed, but there is so much more to this herb. Did you know chamomile is also an anti-inflammatory? Its calming effects on the skin come from this therapeutic action. It is excellent for calming sensitive skin, but also works for soothing inflamed acne, psoriasis, eczema and other skin conditions that are caused by inflammation. Drinking chamomile tea can also help soothe a digestive system upset by stress (IBS, wind & colic, nausea and vomiting, even morning sickness).

How to Make the Frosting for Your Lemon Bread

First, bring a pot of water to boil and add your cashews. We are going to let them simmer for about 30 minutes or so. This will make them soft enough to puree into a cream. While the cashews are soaking, we shall put the kettle on and make our chamomile tea! I personally LOVE the  Republic of Tea brand, so I used their Chamomile Lemon Surrender To Sleep Herb Tea. I am not sponsored by them in any way. You can pick it up at most health food stores but I get mine at Whole Foods.

Let your tea steep, I like mine strong so I pop the tea bag into the half cup of water knowing it will be very concentrated. Chamomile has an incredibly mild taste so you kind of need to make it strong. 

Once your cashews are ready, we’ll add everything into a blender or a food processor and blend into a creamy frosting texture. It takes a while to get everything all smooth, my blender doesn’t always do the trick so you might have a few small lumps that won’t take away from how delicious your frosting will be. Place the mixture into the fridge to chill while you bake your bread. 

A Few Tips for Lemon Bread Perfection

I always mix my dry ingredients first, making sure to evenly combine the baking soda and baking powder with the flour and salt. Then adding wet ingredients by viscosity (meaning I add the milk first, then the oil, then the maple syrup). Seems to always work well for me.

A little lemon zest and poppyseeds look amazing as a garnish atop the frosting. If you can find fresh chamomile flowers that’s an incredible bonus!

After about 40 minutes you’ll want to check your bread, different ovens work at different speeds. Plus everyone has varying tastes in how they want their bread to turn out. I love mine a little doughy so I typically take it out at 40 minutes. If you want a fluffy loaf, you may want to leave it in for the full 45-50!
